Crown Brioche

This is my dad's favorite so far, this wonder piece of sugar goodness is brioche dough filled with strawberry, rolled and topped with icing and powder sugar.  It was a big hit at my dad's house I am glad he loved them.

Final Dessert Table Presentation


I chose a Casino Theme for my presentation. The chef thought it was very original. For my table I made Chocolate Meringue filled with Raspberry Jam. Also Banana Cream Pie, Chocolate Cake, Pecan Diamonds shaped like heart, diamond, spade and club. I made a Battenburg Cake with the colors Blue and Green and the last thing I made were Fruit Tartlets with Pastry Cream.

I am making my best friend Amy's wedding cake, she loves chocolate so it was a natural fit to make a chocolate cake for her. So a couple of weeks a ago i brought her this cake to test. She loved it! So the next step is making her cake for the wedding which is June 12.

This cake was so fun to make. The words could not describe what it tasted like, um Chocolate.

Meringue!


French Meringue

In class I got to experiment with 3 different types of Meringue, Italian, Swiss and French. I found the Italian Meringue to be very challenging, once I got to the Swiss and French I found I really like making these. My favorite was the Chocolate French Meringue tasted awesome.

Petit Four Glace


I know another bad picture, but these are actually a little difficult to make. I struggled with the poured Fondant over the top of them. Luckily I took at as a challenge and made them look pretty.

More Chocolate!


Chocolate Madelines

They reminded me of Twinkies, but I would never say that outright. These were actually a little difficult to make for me. In the end I pulled it out and they looked and tasted fantastic.

Florentine's

Made with a sweet dough lots of sugar pistachio nuts, cranberries and walnuts. They were very yummy, the kids eat them up before I even had time to make dinner.

Pecan, Pecan and more Pecan!

Pecan Diamonds, my Husband todds favorite thing in the world. This is made with a sweet dough for the bottom baked on a cookie sheet. Once cooled cut into shapes of diamonds or any shape you desire. I like to use little bite size cut outs this way they can be package for movie night. I like to eat them instead of popcorn.

Chocolate Chiffon

I know bad picture! Chocolate Chiffon my new friend, this was by far the most challenging pie I have done to date in my class. Loved the design of this pie and scored a 100 on my test.

Both of these pies are really good, my family knows that I am not a huge fan of sweet potato. I really liked it once I tried it. Squash has always been a huge fan of mine, just now in pie form.

Fresh Fruit Anyone!















Fresh Fruit Tart with Pastry Cream as filling. If anyone knows me I love pastry cream, this tart did not last very long once it got home.

Maple Walnut Tart! I am finally starting get a hand of this class. I am having so much fun being introduced to all these awesome desserts. My Final project at the end of this class is going to be a Dessert Table Presentation. Hope you enjoy the ride as much as I do.

Apple Custard Tart, this is one of my husbands favorite tarts that I have made. The only difficult thing for me making this tart was the dough roll out, for some reason the dough was being mean to me. In the end it turned out wonderfully.

Last Week of Breads Class!


Black Pepper Olive Bread Sticks

The time has flew by is all I can say. I finished my winter semester with a 3.8 GPA! This is a major accomplishment for me, very proud of my self for sticking with it. I am currently on spring break enjoying my week off before I start Dessert Plating as my next class. I am super excited and can not wait. I think that I am just excited to be out of breads class and onto something different. Starting next week look for some awesome pictures from my next class. Happy Easter to everyone!

Diet Coke on Bread! Huh??


Diet Coke Bread Plaque

I got an A! Crazy I know! This is a bread plague it turned out nothing like I wanted it to. Originally I wanted the can to be 3D, but my (play dough) Salt Dough was being a pain in the Butt. Yes you heard correctly, Play Dough! Actually took me about an hour of kneading the dough to get the color. I really had a lot of fun making this plaque, next time I will go with my gut and do what I wanted too.

Vienna Sunburst Bread!








Vienna Bread







This bread is made with 15 rolled out pieces of dough about 8 inches long. You begin by forming a circle with the rope pieces over lapping each other. Then take 3 strains and braid them forming it into a star shape. This bread taste awesome!

Challah Bread!


Challah Bread

This is a traditional Jewish bread eaten on Sabbath and Jewish holidays. A little history lesson everyone! The dough is made with a number of eggs, and sweetened with honey. The dough is traditionally cut into three rope-shaped pieces and then braided together before baking. An egg wash is applied to the dough to give it a golden color while baking. Poppy or sesame seeds are sprinkled on the bread before baking. The seeds represent manna that God gave to the Israelite to eat while they wandered in the desert.

This bread is good, I actually gave it to my dad to serve to everyone for St Patricks Day. Everyone said it was good, which doesn't hurt my ego at all. I am getting very excited to move on to the next class Dessert Plating. Yummy!

What can I say! These are buy far the best thing I have may yet since starting school. They are cinnamon rolls with pastry cream as the filling along with rum raisins. Umm, ya they so taste as good as it sounds. The other lovely thing's are Croissants!

Artisian Flat Breads!




Welcome to Ciabatta, Fougasse and Polenta Breads. Wow, these breads are so amazing! All of these are considered flat breads and have a wide variety of uses. My favorite out of all of these is the Ciabatta Bread! I made a garlic cheese spread in class cut up the bread and away I ate, WOW!
